Indonesian fried rice (Nasi Goreng)

4 Persons - 30 Minutes

Ingredients

  • 700g cold, cooked rice
  • 3 shallots, sliced
  • 3 cloves garlic, crushed
  • 2 tbsp sweet soy sauce (or kecap manis = Indonesian sweetened aromatic soy sauce)
  • 1 small tbsp Go-Tan Nuoc Mam (fish sauce)
  • 1 tbsp Go-Tan Sambal Oelek Chilli paste or Go-Tan Sriracha Sauce
  • tbsp Go-Tan Wok oil
  • 4 eggs (optional)
  • 150g chicken breasts, finely diced
  • 1 tbsp Go-Tan Oyster Sauce
  • Salt and pepper
  • 2 tomatoes, sliced
  • 1/3 cucumber, sliced
  • 1 packet Go-Tan Krupuk (prawn crackers)

Method

  1. Mix the chicken with the oyster sauce and garlic. Add salt and pepper.
  2. Mix by hand the cold rice, soy sauce, nuoc mam and chilli paste. Make sure all the grains of rice are well covered.
  3. Heat the oil in a wok or frying pan. Fry the shallots until they are browned. Then add the chicken. When the chicken is nearly cooked, add the rice. Cook on a high heat until the rice is really hot. Taste and add more seasoning if needed.
  4. In the meantime, you can fry the eggs in a little oil in another frying pan.
  5. Serve the rice with krupuk (prawn crackers) and slices of tomato and cucumber.
