Soyasauce

Deze, op traditionele wijze gebrouwen, soyasaus heeft als unieke eigenschap dat het van nature glutenvrij is. Hoewel er bij de productie gebruik wordt gemaakt van tarwe, breken de culturen die primair worden toegevoegd om de soya te fermenteren de gluten in de tarwe ook weer af.
Doorlopende wetenschappelijke analyses van elke productiehoeveelheid laten keer op keer zien dat het glutenniveau onder de 20 ppm blijft (dit is momenteel de mimimum aantoonbare hoeveelheid middels bestaande analysemethoden). Dit betekent dat de soyasaus ten minste 10 maal minder gluten bevat dan wat volgens de officiele Codex Alimentarius standaard wordt gedefinieerd als glutenvrij (namelijk, max 200 ppm).
Go-Tan is er van overtuigd dat dit product geschikt is voor coeliakie patiënten die slechts milde allergische reacties vertonen op gedeglutiniseerd tarwemeel, oftewel pure tarwezetmeel. Echter, op dit moment kan Go-Tan de complete afwezigheid van persoonlijk ondervonden negatieve effecten niet garanderen voor patiënten die lijden aan een absolute gluten intolerantie (nul tolerantie).

Soya Sauce (gluten free)

This traditionally brewed soy sauce has the unique characteristic of being naturally gluten free. Although wheat is used during production, the cultures primarily used for soy fermentation also break down the gluten present inside the wheat.
Continuous scientific analyses of every production batch repeatedly show that the level of gluten stays below the 20 ppm level (this is the minimum detectible amount by current methods of analyses). This means the soy sauce contains at least ten times less gluten than the official Codex Alimentarius standard requires a product to have in order to define it as gluten free (namely max. 200 ppm).
Go-Tan is confidant this product is suitable for celiac patients who display only mild allergenic reactions to high quality purified wheat starch. However, at this moment Go-Tan cannot guarantee complete absence of any adverse effects for those patients who have an absolute zero tolerance for gluten.
